More than a century later, the lights are back on, and its doors are open to the public for the very first time — revealing a world where history is honoured and indulgence is elevated. Outside, a bespoke glass conservatory awaits, offering guests an immersive dining experience under the Otago sky, year-round. Framed by lush topiaries, the Conservatory pays homage to the orangeries of old – spaces where exotic plants collected from far-off expeditions would thrive during colder months.
