The Jewel in Ayrburn’s Crown - Billy's is now open, and reservations can be made online.

Billy’s is a tribute to the past and a celebration of the now —offering a modern Chinese dining experience, a nod to Arrowtown’s deep connection to Chinese heritage. Under the direction of Executive Chef Richard Highnam, the culinary team have meticulously crafted a menu of authentic, elevated Chinese dishes—each one curated to complement the stunning surrounds. Expect refined interpretations of classics, bold flavours, and a reverence for fresh, local ingredients. The menu is designed for sharing, storytelling, and savouring—a modern dining experience that is immersive, sophisticated, and unmistakably Billy’s.

Built in the late 1800’s, the Billy's homestead was the first dwelling in the region to feature electric lighting. More than a century later, the lights are back on, and its doors are open to the public for the very first time—revealing a world where history is honoured and indulgence is elevated.

Outside, a bespoke glass conservatory awaits, offering guests an immersive dining experience under the Otago skies, year round. Framed by lush topiaries, the conservatory pays homage to the orangeries of old—spaces where exotic plants collected from far-off expeditions would thrive through cooler months.
